How to make Cupcakes

Ever since I was a little girl, I have always loved making and eating Cupcakes. It reminds me of my Nan because she used to make ‘Nanny Cakes’ which were honestly the best cakes you would have ever tasted! Now she is ill she doesn’t really make them as much anymore so I thought it was my turn to make my family some cupcakes.

To make the Cupcakes you will need:

  • 115g Self-Raising flour
  • 115g Caster Sugar
  • 115g Butter
  • 2 eggs
  • 1tbsp Lemon Rind.

Step 1: Preheat the oven to 180C/350F/Gas Mark 4. Cream the butter, sugar and lemon rind together until pale. You can add salt in at this stage if you wish.

Step 2: Whilst the mixture is being beaten, line a cupcake/muffin tin with paper cases. I like to use silicon cases instead as you can reuse them over and over again.

Step 3: Once pale, beat in the eggs. You can add in vanilla extract at this point if you wish.

Step 4: Fold in the flour until well combined. If the mixture is too dry you can add a drop of milk in until you get a dropping consistency.

Step 5: Spoon the mixture into the paper cases and place in the oven for 15-20 minutes. How to make cupcakes

Step 6: Once the cupcakes are cooked, leave to cool. Once cool you can start to decorate your cupcakes.

How to make Butter Icing:

You will need:

  • 140g Unsalted Butter
  • 280g Icing Sugar
  • 1-2tbps Milk
  • Food colouring and edible decorations.

Step 1- Beat the butter into a large bowl until soft

Step 2: Once soft add half on the icing sugar into the bowl and mix

Step 3: Once mixed, add in the rest of the icing sugar and 1-2tbsp of milk until the mixture is smooth, mix again.

Step 4: Once mixed add a tiny drop of any food colouring you like.

Step 5: Decorate your cupcakes, I decided to spread and smooth the butter icing and then add some sprinkle, but this stage is completely up to you!
